Chickpea water — known in the vegan world as aquafaba, and which is the thick liquid that is discarded from cans of chickpeas or other beans — is newly exciting the culinary and food processing worlds for its uncanny ability to approximate the effects of egg whites.
The IRI New Product Pacesetters Report outlines the top-performing new brands in the huge US market every year. Leading UK thinktank on food and health, New Nutrition Business, believes this year's top products show there's still plenty of potential and profit in products that are off-trend.
British supermarkets cater to the trend of unprocessed food, or clean eating, with product innovations in the fresh produce sector. This trend involves having a healthy diet with lots of fruits and vegetables and no additives, such as sugar or preservatives.
